Here’s a lovely quick and easy weeknight dinner I made, starring: oven baked salmon in whole grain mustard, over roasted Brussels sprouts with garlic and sweet potato garlic mash. Yum. 🙂

- Brussels sprouts back from their 30 minute Mediterranean vacation in the oven at 425F. I found a few recipes online and settled upon one that recommended halving the srpouts vertically. My guess is you want to increase the surface area of the yummy roasted taste and lower the more boring steamed parts. I was right. 🙂
