I enjoy finding ways to plate and pair Indian cuisine in a more occidental setting, since I oftentimes find Indian cooking to be more conducive to  “family style” or shared plate eating. Here is my latest creation: a luscious Chicken Chicken Curry of the Moment (spices, tomato, chard, coconut flakes, cinnamon stick) atop a very Odia dish of alu bhartaa (mashed potatoes with crispy shallots and toasted mustard seed). Garnished with snap pea slivers. Yum!
