Here’s a quick and easy weeknight healthy go-to meal that never fails to disappoint. Like ever. I wolfed this down in record time.
Baked green curry and yoghurt salmon with basmati rice and a side salad of mâche greens. Oh how interesting, mâche is also called “rapunzel”.
- Behold! A lovely piece of fresh wild-caught salmon bought at this morning’s farmer’s market. Look at ‘er, isn’t she a beauty?
- The arsenal: 1/8th minced onion, 1 teaspoon of green curry paste, 2-3 tablespoons of yoghurt, a healthy portion of wild salmon filet, a generous twist of lime and mâche greens.
- Slather green curry-yoghurt-onion-lime paste onto salmon and pop into oven uncovered for 18 minutes at 425F. Make some basmati rice, in the meantime.
- 20 minutes later, we have dinner! I threw in some fresh mâche, sans dressing of any kind, letting the delicate yoghurt-curry and wild salmon be the reigning flavours of the evening.
