Here we have shell (conchiglie) pasta, kalamata olives, red onion, cafe mushrooms and a small container of “kadoo” which is Afghani prepared pumpkin/butternut squash, garlic and spices. Garnished greenly with leftover fresh coriander. It’s lazy mid-week deliciousness. Oh, and I added a dash of red wine I happened to be drinking at the time.
This dish is also accidentally vegan – I say accidentally as had there been any in the fridge I would have added freshly grated Parmesan.
