Walnut encrusted fresh tilapia baked “en papillote” with sliced navel orange, shallots, coconut milk and… (wait for it) blueberries. A simple side of red quinoa and a salad of mixed greens, avocado and Persian cucumber accompany this crazy dish.
Interesting to note: back east in Montreal Persian cucumbers are called “Lebanese” and in Toronto, apparently “Israeli”. Either way, they are cute and pack a delicious crunch.
Pre-oven prep: package everything nicely together, seal in aluminum foil and bake at 425 F for about 18 minutes or until done.
Ingredients:

- sliced french shallots
- navel orange slices
- blueberries
- walnut pieces
- fresh chives
- dash of coconut milk
- sea salt
- olive oil
Things I might have changed with this dish: perhaps an extra tang of grated fresh ginger might have brought this together a little more.
