It’s a shade darker than normal, what happened was that I added the vinegar to curdle the milk, and let it sit until it was cool enough to handle. However, I forgot to turn off the burner and then went off to get sucked into the universe of FaceBook for 20 minutes. When I realized, I ran back in fear of paneer loss, but all was well, it was still bubbling away in just enough whey, though it had turned a nuttier shade of cream. (Yes, a “nuttier shade of cream,” I said it).
After wrapping it up in a clean dishtowel and hanging it up to dry, I was not disappointed by this morning’s results. 🙂
