So, I found some green mangoes fallen off the tree on the front lawn of our vacation share in Maui, yesterday, (now, there’s a conversation starter), and I decided to employ them in our dinner. I decided to make a raita, julienning the green mango, adding a pinch of chili flakes, roasted cumin seeds and Alaea sea salt. Tangy and delish!
I give you: curried steelhead trout on the barbie, eggplant and spinach bhaji with cumin and fenugreek, green mango raita and quinoa.
