Behold this simple dish of cappellini with anchovies (in olive oil as well as their own), browned garlic and baby spinach blanched in with the pasta, graced with Parmesan and cooked up to the classic sounds of Kishore Kumar oldies. It was accompanied by an adorable salad of tomatoes, avocado and sunflower seeds and a good ol’ glass o’ wine. A satisfying dinner at the very end of a day working hard in a kitchen!
